Pancakes Caseros (Hot-cakes)
Los mas perfectos, esponjaditos por dentro y ligeramente doraditos por fuera, acompañados con mantequilla y miel de maple que al derretirse y mezclarse con tus hotcakes es una locura de sabor.
Hechos con ingredientes naturales y de calidad, hechos con amor para que te enamores de ellos.

Esta receta a sido pensada en que descubras lo fácil y divertido que es preparar tus pancakes caseros desde cero, no harinas preparadas, no conservadores y nada de sabores artificiales.
Y déjame decirte que es una maravilla de receta, es súper fácil de preparar y no hay falla, los pancakes quedan ricos porque quedan ricos, se los aseguro.

Otra cosa que me encanta de esta receta es que necesita mínimo de ingredientes, ingredientes que la mayoria de nosotros ya acostumbra a tener en casa y el proceso es súper fácil de preparar, solo necesitas un tazón y un batidor de mano.

Para esta receta yo sugiero mantenerla al pie de la letra y no omitir ningun ingrediente ya que cada uno tiene un propósito ya sea para dar sabor o textura.
Lo que si puedes hacer es substituir los lácteos con productos libres de lácteos o basados en plantas. Por ejemplo: leche de vaca por leche vegetal, mantequilla por mantequilla vegana.

Estos pancakes quedan perfectos servidos con un cubito de mantequilla y una generosa porción de miel de maple.
Y se que tal vez tu eres mas del team cajeta o lecherita sobre los pancakes pero confía en mi por esta ves e inténtalos con maple y mantequilla, veras que no te arrepentirás.

Pancakes Caseros de Mantequilla de Leche (Buttermilk)
Tiempo de preparación: 5 minutos
Tiempo de cocción: 10 minutos

Pancakes Caseros de Mantequilla de Leche
Ingredientes
1 taza de harina de trigo
3 Cdas de azúcar de caña
½ cdita de polvo para hornear
½ cdita de carbonato
½ cdita de sal
1 cdita de extracto de vainilla
1 huevo
3 Cdas de mantequilla derretida
1 taza de buttermilk
Para preparar el buttermilk
Buttermilk es Suero de leche o mantequilla de leche (jocoque) es una especie de leche cortada que se puede hacer simplemente mezclando 1 taza de leche con 2 cditas de vinagre blanco y se deja reposar unos minutos hasta que la leche se corte, esto al aumentar la acidez en la leche le dara un sabor y textura delicioso a los pancakes.
Instrucciones
1. En un tazón mediano, mezcla harina, polvo para hornear, bicarbonato y sal. Haz un hueco en el centro y agrega 1 huevo, vainilla, buttermilk y mantequilla derretida, mezcla todo bien, ten cuidado de no sobre batir, bate solo a integrar.
2. Calienta un sarten de hierro fundido o bien un sarten anti-adherente, unta un poco de mantequilla y retira el resto con una servilleta.
3. Vierte un poco de la mezcla de pancakes, aproximadamente 2-3 Cdas y calienta a fuego medio por 2 minutos despues da la Vuelta y calienta el otro lado por un minut0.
4. Sirve los pancakes tibios con un cubito de mantequilla y corona con una generosa porción de miel de maple.

Homemade Buttermilk Pancakes

Perfect homemade buttermilk pancakes, crispy on the outside and fluffy and soft in the inside, they are buttery and perfect with small air pockets to absorb butter and as much maple syrup as you want. They are a pancake dream come true.
Seriously they are so perfect that you are not going to believe they are homemade, but they are, and because of that they are better than any store-bought pancake mix.
Another thing that I love about making your pancakes from scratch is that you can be able to choose carefully the quality of every single ingredient and of course this also gives you the opportunity to put some love on the process and this make them just better!

I mean, come on! Who doesn’t love weekend pancakes? Who doesn’t love a stalk of warm homemade pancakes with a cube of butter and a generous almost exaggerated drizzle of maple syrup?
Well, I love them! Even though I have been denying my love for pancakes. Even though I tell myself the story that I wasn’t a pancake lover haha I was obviously lying in the name of a low-carb tradition haha but as soon as Rogelio (my husband) convinced me to try my new buttermilk pancake creation for him I surrender myself and discovered how pancake lover I was. I guess I just haven’t tried the pancakes that make me discover my true love for them.

Every single ingredient has been chosen to add either flavor or texture to the pancakes, so please try not to omit any of them, because you can get a different result.
The only thing you can switch if you like is dairy products for plant-based options, such as butter for vegan butter same quantity and cow’s milk for plant-based milk again, same quantity.

Recommendations
To cook the pancakes I highly recommend you to use a cast iron skillet slightly greased and low-medium temperature, cast iron skillet give the pancakes such a lovely and crispy texture. Keep in mind that cast iron warms really high and pancakes cook so fast just be careful while adjusting the temperature.
If you don’t have a cast iron skillet, my recommendation is for you to use a non-stick pan.

Homemade Buttermilk Pancakes
Ingredients
1 cup all-purpose flour
2 Tbsp cane sugar
½ tsp baking soda
½ tsp baking powder
½ tsp sea salt
1 tsp vanilla extract
1 large egg
1 cup buttermilk
3 Tbsp melted butter
To make your own buttermilk:
combine 1 cup whole milk with 2 tsp white vinegar and let it rest for a couple of minutes.
Instructions
1. Into a medium bowl add all-purpose flour, sugar, salt, baking powder and baking soda and mix to combine.
2. Add in 1 egg, 1 tsp vanilla extract, 1 cup buttermilk and melted butter and mix with a whisker just until no remain flour and everything combined.
3. Warm a cast iron skillet or a non-stick skillet, add some butter and dry with a paper towel any butter excess.
4. Pour some batter over the warm buttered skillet, about 2-3 Tbsp. Cook for 2 minutes then flip and cook the other side 1 more minute.
5. Stalk pancakes over a plate and serve warm with a good tablespoon of butter and a generous drizzle of maple syrup.
